West Bend, Wi – Top of the mornin’ lads and lassies, “Sláinte!” and all the rest of that Irish stuff. In search of a little Irish flavor on St. Patrick’s Day we found the master of the pour at Brazenhead Pub on Main Street in West Bend, WI. Dawn is a seasoned bartender and through the years she has topped off many a Guinness with a perfect shamrock.
“You always want to let the Guinness settle and let it create a nice head,” said Dawn. “Then when you come back and tip the tap away from you this time to finish the beer off and add a shamrock.

Dawn said it is tougher than it looks. She pours the first shamrock and then traces over it again a second time for better definition.
